Anyone have some good fresh salsa recipes to recommend. I've got tomatoes to use up. Already made a gallon of amazing tomato sauce, but they're still coming.
1 mango, 1 avocado - both peeled, pitted, and diced
4 medium diced tomatoes, seeded if you want less liquid
1 jalapeno pepper seeded and minced or leave seeds/use more if you want more heat... See More
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 tsp salt or to taste
2 tablespoons fresh lime juice or to taste
1/4 cup chopped red onion
3 tablespoons olive oil
Give yourself at least 30 minutes before serving for all the flavors to mingle. It's good!

Here's a recipe for making salsa you can freeze and enjoy later:

10 fresh medium sized tomatoes (I use a mix of cherry and large)

2 medium sized jalepenos
1 medium green pepper
1 lemon
1 tsp. garlic powder (I use more)
1/4 tsp salt
(optional) cilantro to taste. (I don't add it because I don't like it.)
Wash and remove stems of the green pepper, jalapenos and onions. Place them in food processor. Run processor on low until the ingredients are well chopped. (This salsa is mild. For hotter salsa, add more jalapenos. I do not remove the seeds.)
Wash tomatoes and remove stems. Quarter tomatoes and place in food processor. Chop tomatoes in processor and then drain them. Add the lemon juice and tomatoes to the pepper/onion mixture. Add salt and garlic powder and stir well.
Eat it now, or stick it into freezer safe containers and freeze.
